Star Shokudo, a popular western-style restaurant in Kyoto, and Yuichi Kimura, a.k.a. Kim's brother, held a press conference at Kyoto Station last October 2023 to announce the 100th anniversary collaboration project of "Western-style prepared foods Star Shokudo x Yuichi Kimura" - Kyoto Western-style cuisine with a "taste of Showa" and to announce the tasting and release of the collaboration products. [Star Shokudo was established in 1925 in Nishiki-Tenjin-mae, Kyogoku-dori, and is one of the restaurants that popularized Western-style cuisine in Kyoto. The collaboration began when Brother Kim worked part-time in the kitchen of Star Shokudo when he was in high school. Brother Kim said, "I first learned about carbonara at this restaurant when I was 16 years old. They also made croque-monsieur, about 35 years ago. This time, they asked me to recreate the menu from that time," he said.
At the presentation conference, a final review was held to determine whether the menu, which had gone through a series of tastings, would be commercialized. The taste of the prototype menu up to that point "was a little different from what I remembered. It was more dry," said Kim. Taking this advice, Executive Chef Matsushita further upgraded the menu for the final judging. Mr. Matsushita said, "It is very difficult to make carbonara light. However, when Brother Kim, who tasted the dish, gave the OK, the audience applauded loudly.
Brother Kim said, "This! It's good! I'd like you to go away for the carbonara. This is the first carbonara that a Japanese person has ever tasted that is so light and simple. It's refreshing yet rich at the same time.
Tutorial's Mitsunori Fukuda, who served as MC for the event, also tasted the food with his memories of going to Star Shokudo. It's not rich, but it's delicious! It's just like spaghetti soup. Even older people can enjoy it easily.
