● Ajari-mochi
Ajarashi Mochi Honpo Mangetsu is a Japanese confectionery established in 1856 at the end of the Edo period. Ajarashi mochi is made in the image of the Ajiro hat that Ajarashi-sama is said to have worn during his ascetic training on Mount Hiei, which is also the origin of its name. Ajarashi mochi is a semi-perishable sweet made by kneading various ingredients such as eggs into a dough based on rice cake flour and baking it with mashed sweet bean paste. The sweet is baked in a baking pan and filled with sweet bean paste. Founded in 1685, this long-established business continues to use all five senses in its production methods, which are still passed down to this day.
