A seminar commemorating the 10th anniversary of the registration of Japanese cuisine as a UNESCO Intangible Cultural Heritage will be held on January 27, 2024 (Saturday) at the Kyoto Culinary Arts College near the Ohata Tenjin River. The seminar will include a "dashi drinking comparison" by five famous Kyoto restaurants, and a lecture by Dr. Toru Fushiki, President of Koshien University and Professor Emeritus of Kyoto University, who has been conducting research to elucidate the mechanisms of deliciousness of oils and dashi and to develop an objective evaluation method for their deliciousness. In addition, a panel discussion will be held with representatives of Kyoto's culinary culture to provide an excellent opportunity to learn about the depth of Japanese food and dashi. Participation is free, so why not take this opportunity to learn about Japanese food culture? Reservations are required in advance and will be closed when the seminar is full. Early reservations are recommended.
