Yamamoto Honke is a long-established sake brewery in Fushimi that has revived the seasonings and roasted sake that were used from the Muromachi to Edo periods. Roasted sake is made by combining sake with umeboshi, kelp, and bonito flakes, which brings out the natural flavors of the ingredients while keeping the salt content low. We use Junmai Daiginjo for roasted sake. In commercializing it, we worked together with Mr. Atsushi Middle East, the owner of [so/s/kawahigashi]. Put it in aemono or use it as a salad dressing.
