Kunel, a bakery that has operated in Mimuroto for about seven years, has moved to the Ujibashi-dori shopping street and restarted under a new name. The owner, Yuko Nishi, wants to convey the appeal of bagels, her favorite bread, so she continues to carry the sign as a bagel specialty store.

"on egin" means "eat up" in Basque. A total of 25 to 30 kinds of breads are lined up, including baguettes with whole wheat flour and croissants with buttery aroma. They bake as many breads as possible before opening and welcome you with a shiny smile.

They are experimenting with new baking methods by selecting ingredients that place as little burden on the environment as possible. Gesso, whose dough is fermented with homemade yeast containing Kyoto-grown soybeans, and bagels made with ancient wheat, both have a robust flavor that becomes more delicious the more you bite into them.

A bakery run by a couple with a friendly atmosphere. Tongs and trays for kids are also available, which is a nice touch for children. The bakery opens at 7:30 a.m., so you can get freshly baked bread in the morning when you wake up early.

The owner, Mr. Ehara, who trained at bakeries of different styles, became independent last October. The lineup includes baguette-type breads, which he says he arrived at a miraculous lightness, as well as sweet breads, prepared breads, bagels, and more.
