Hello, everyone. WebLeaf staff members with a sweet tooth have taken notice of the "Kyo no Financier" created by Fumonan, a confectionery in Shimizu, Kyoto. It is said to be a hot new standard souvenir from Shimizu...and it seems that these financiers were made in collaboration with some amazing people.

Kyo-France was originally created in 2018 to celebrate the 60th anniversary of the Kyoto-Paris Friendship Pact (sister city). Most noteworthy is that it is supervised by Pascal Morines, a patissier with the French National Order of the Best Craftsman (M.O.F.), and Yasuyuki Vinzuda, a tea master with the National Tea Judging Techniques Judgment Dan, of which there have been only 13 in the past! It goes without saying that his skills as a pastry chef are solid.

The tea is supervised by a tea master with the 10th dan of the national tea judging technique, which means that the ingredients used are, of course, matcha green tea. The tea leaves are carefully selected from the first harvest, mainly rare varieties with good color, and are aged at low temperature and ground with a stone mortar to create a harmonious and deep flavor.

For the dough, we chose fermented butter made with milk from the Izny St. Maire Dairy Cooperative in France, which is known for its richness, rich aroma, and elegant milk flavor.
